Recipe: Moroccan spiced nuts

  • 40 grams unsalted butter
  • 60ml extra virgin olive oil
  • 400g mixed nuts
  • 4 large cloves garlic, bruised with the back of a knife
  • 4 tablespoons sea salt
  • 2 teaspoons caster sugar
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon sweet paprika
  • 1 pinch cayenne pepper (or to taste)

  1. Melt butter and olive oil in a large fryng pan over medium heat.
  2. Add mixed nuts and garlic.
  3. Stir constantly for 4-5 minutes, until golden brown.
  4. Drain on paper towels, discard garlic and place nuts in a bowl.
  5. Place salt in a mortar and pestle and grind to a powder.
  6. Add sugar and remaining spices and mix well.
  7. Combine mixed nuts and spices and toss together.
  8. Spread on a tray to cool before serving.

  1. Did not know you made tbis from scratch as well!!! ( Thought you just bought them from the Supermarket). Good effort!! Pressure is on now! -hc
